Happy Birthday – and a recipe.

I was gonna say Happy Monday, but I reckon it’s Tuesday already!  Love the short work-week, but the missing Monday is going to throw off my days for the rest of the week.  Anyway….  So today I’ve got a little card that was in the March issue of CARDs magazine.  I really like this card and I’m not ashamed to say it.  That pretty lace trim is from A Million Memories who is going out of business and having a big ol’ sale right now.  Head on over to her site and use code SUMMER for 60%-off everything in the store!

We had lasagna cupcakes for dinner last night.
And they were too easy to make and too dang good to not share with you.

24 wonton wrappers
1/4 C  parm
1/2 C  ricotta
3/4 C shredded mozzarella
3/4 C meat sauce

Preheat oven to 350 degrees.

Use muffin tins, and coat each cuppie with a lil’ olive oil.

1 wonton wrapper per muffin cuppie.

Layer in order:  1 tsp. of mozz, pasta sauce and ricotta cheese and top with a bit of parm in the middle.

Top with another wonton wrapper, pat down a lil’, repeat the above layering and finish off with some more mozz on top.

Pop in the oven for 15-18 minutes until they are nice and golden brown.

    What an utterly drool worthy post! That card is beautiful. I really do love a good bit of lace combined with that pretty floral DP. Now that stuff below it is incredible looking. Just call me Pavlov’s dog. Shivers! I bet my kids would love it too and if not…more for me! Squeeeeeeeeeeeee!
