Almond Flour Cinnamon Chip Cookies – GF.

I made some French macarons this morning.  And they were busted.  Even with a template, they were way off shape.  I had maybe 3 that could pass.  But for only getting 13 cookies per batch, it wasn’t worth my time to keep at it.  So I moved on.  And ended up with some pretty good cookies that I can’t wait to share with the kiddies along with a glass of milk when they get home from school today.

Almond Flour Cinnamon Chip Cookes – gluten free.

3 cups almond flour
1 stick butter – softened, not melted
1/2 cup granulated sugar
3 egg yolks (I had leftovers from the macarons)
1/2 tsp salt
1 tbsp vanilla
1/2 tsp baking soda
2/3 cups Hershey’s cinnamon chips

Preheat oven to 375 degrees.
Beat together almond flour, butter and sugar.  Beat on low and add in eggs, salt, vanilla and baking soda.  Fold in cinnamon chips.
Scoop 1″ balls – 8 to a cookie sheet, on a Silpat.  And then flatten a bit with your hand.
Bake for 13 minutes.
Yield: 40 cookies.

You’ll have to let me know if you try them.  I really love the nuttiness from the almond flour.
