{Andes} Mint Chocolate Cookies.

My son is a mint fanatic.  Mint chocolate chip ice cream is like his most favorite thing in the world.  I made him an ugly but super minty ice cream cake for his birthday.  He’s just crazy about mint.  And chocolate.  Together.  Or separate.  We went to his parent-teacher conferences last week, and aside from being unorganized and never having a pencil (we only bought him 100 of them before school started), he’s doing well.  As and Bs, and 1 C.  I can live with that.  So when I saw this recipe on Pinterest, I knew I had to pin it and make it for him someday.  Today is that day.

After reading the comments on this recipe, I decided to add an extra egg, and some water to give it more moisture.  And I increased the mint extract as well.  Here is my adaptation.

{Andes} Mint Chocolate Cookies
2 sticks butter – softened, not melted
1 1/2 cup sugar
2 eggs
1 tbsp mint extract
20 drops green food coloring
2 3/4 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/4 cup water
1 bag of Andes mints – chopped

Preheat oven to 375 degrees.
Beat together butter, sugar, eggs, mint extract, and food coloring.  Add, and beat in flour, baking soda, baking powder, and salt.  Add water and beat in – dough will be sticky.  Fold in the Andes.
Scoop 1″ balls – 8 to a cookie sheet, on a Silpat.  And then flatten a bit with your hand.
Bake for 11 minutes.
Yield: 59 cookies.

These cookies are very minty.  Not terribly sweet.  Not terribly chocolatey.  And if you let them go too long, you’ll get the brown edges which is not pretty on a green cookie.  But I would totally make these again – for my son.
