{vegetarian} Pumpkin Beer Bread for adults….and one for the kids.

I took the day off today to do the Halloween school things with the littles, get things prepared, and do some baking.  I’m finally making something with my homemade pumpkin purée.  And because we have “make pumpkin bread” on our fall bucket list, I felt it only right to do this on Halloween.

First up is a Pumpkin Beer Bread.  Not made with pumpkin beer (although I’m sure that would be great).  Just made with beer.  So “pumpkin beer bread” means pumpkin and beer in the bread, not pumpkin beer in the bread.  Make sense?  OK.

{vegetarian} Pumpkin Beer Bread
2 cups white flour
1 cup graham flour
1/2 cup packed dark brown sugar
1 tbsp baking powder
2 tsps pumpkin pie spice
1 tsp salt
3 tablespoons honey
1 cup pumpkin purée
1 12 oz. bottle of beer (I used an amber Dos Equis)

Preheat oven to 375 degrees.
Beat all ingredients together.  Spray pan with Baker’s Joy – or something, as there is no oil or butter in this recipe.  The pan will fill up to the top and you will think it’s gonna overflow, so I put a cookie sheet on the rack under it just in case.  But no overflowage here.
Bake for 60 minutes.

 

And I know that alcohol cooks out when you cook with it, but it’s probably just a well that we don’t have the kids runnin’ around all loud and proud that they are having something with beer in it, so I made a different pumpkin bread for them.

{vegetarian} Pumpkin Pear Bread
2 cups white flour
1 cup graham flour
1/2 cup packed dark brown sugar
1 tbsp baking powder
2 tsps pumpkin pie spice
1 tsp salt
3 tablespoons honey
1 cup pumpkin purée
1 pear, grated
1.5 cups apple juice

Preheat oven to 375 degrees.
Beat all ingredients together.  Spray pan with Baker’s Joy – or something, as there is no oil or butter in this recipe.  The pan will fill up to the top and you will think it’s gonna overflow, so I put a cookie sheet on the rack under it just in case. But no overflowage here.
Bake for 60 minutes.
